Griddled salmon with carrot spaghetti
Salmone alla griglia con spaghetti di carote
This recipe is almost harder to pronounce than to prepare and the ingredients are equally simple. All you need is a fillet of salmon, some carrots, onion and a well-stocked spice shelf containing coriander seeds. Fifteen minutes later you can sit down to a meal that tastes like summer at the seaside.
Ingredients
4 slices of salmon fillet
6-8 big carrots
1 chopped onion
1 tbsp coriander seeds
2 tbsp white wine
4 tbsp white wine vinegar
Sugar
Olive oil
Lemon or lime juice
Preparation
Peel the carrots and cut them in fine strips lengthwise (this becomes a lot easier, if you happen to have a mandolin slicer or similar kitchen aid).
Heat a griddle pan, grease it with enough olive oil to avoid sticking and griddle the salmon for 5 minutes on each side, depending on the thickness of the fillet.
Heat some olive oil in a casserole and fry onion and the coriander seed. Add carrots, white wine and vinegar and braise the carrots until they start to soften (It does not take long).
Season to taste with salt, peppers and a pinch of sugar.
Give the salmon a squeeze of lemon, arrange the carrot spaghetti on a plate and serve. È facile.
